Picked at dawn in northern Thailand, the Butterfly Pea flower is dried whole and stone-milled into a fine indigo powder. Naturally caffeine-free and rich in antioxidants, it transforms any liquid into a vivid cobalt blue — shifting to violet with a squeeze of lemon.
